PINEAPPLE-COCONUT MINI BUNDT CAKES


Hawaiian flavored Pineapple-Coconut mini Bundt cakes are my contribution to Maheswari's AFAM 'A Fruit A month' event.She has chosen my favorite fruit Pineapple for March. Thank you for hosting Mahesh.





Pineapple-Coconut mini Bundt cake:

You Need: Makes one 9 1/2" X 5 1/2" loaf

Preheat the oven to 350F.Grease and flour a loaf pan or line with parchment paper.


1 1/2 cups chopped Pineapple,2 Eggs,1/2 cup vegetable oil,3/4 sugar, 2 cups plain flour,1/2 tsp Cinnamon pd,1 tsp baking pd,1/2 tsp baking soda,1/4 tsp Nutmeg pd,1/2 tsp salt,1/2 cup sweetened Coconut,3 tbsp Walnuts.(I used low sugar chunky Pineapple preserve as you can see!)




How to bake them:


In a bowl,beat eggs until fluffy,add oil,sugar,beat until light.Mix in Pineapple.Mix all the dry ingredients seperately and add to the wet mixture and mix just until combined but don't overmix. OR you can blend in a processor except Pineapple and when mixed,add in Pineapple and combine by hand.



Spoon the batter into the pan,tap gently to release the bubble and put it in the oven in the middle rack.Bake this for 50-55 mins or until knife inserted in middle of the cake comes out clean.Invert and cool on the rack.Serve sprinkled with sugar pd or by itself.Either way ,it's delicious!




Note: I used mini Bundt cake pan.You can also bake this in a large Bundt cake pan too.This recipe is adapted by "Quick Breads" authored by Beatrice A. Ojakangas.She made this cake with Strawberries and added more coconut.I changed it to less coconut and used Pineapple.

Pineapple: The word "pineapple", first recorded in 1398, was originally used to describe the reproductive organs of conifer trees (now termed pine cones). When European explorers discovered this tropical fruit, they called them "pineapples" (term first recorded in that sense in 1664) because it resembled what we now know as pine cones. ashakka, i was wondeing what u will comeup with for AFAM:) lovely-dovey-yummy cake. looks so good. can i omit coconut here? coz somewhat i dont like the coconut bits in mouth.
i just got pinapple yesterday. will see what i can comeup with:)
getting bored to death. its just been 1 week since i am at home n now cant wait to start work. planning to do some rough sketches n little bi of painting. will cath u later... hugs to u:)

OOOhh, what a lovely treat to wake up to! I think I'd try these for breakfast while M. is home from college. He LOVES pineapple. Looks gorgeous Asha, especially love how you plated it with all the fluffy coconut around! :)

yummy bundt cakes.. I love the fact that you used mini bundt pan, everyone gets their own cute individual cake.
I bought a pineapple this weekend for the AFAM, have no clue what to make yet. You always seem to come up with the perfect dish for each event.

what cute looking bundts. i have been experimenting with baking... and am so into it. i would love to get hold of these mini bundt pans. my family is very picky abt the "eggy smell" in cakes... and alwayss complain about it. do u know of any way to make thse eggless?

You know SL!!When I used to bake cake in India,it always smelled like eggs and here in US,cakes don't smell of Eggs at all.I think it's strange!
Anyway,coming back to the Eggless,yes you can skip eggs and add 1 tsp more baking powder.Without eggs,they become little dense,if you increase the baking pd ,it might help.Try it!:))

Hi P!! Thanks for Chitranjan name,didn't know that?It sounds like Chitranna of K'taka though.This yellow rice is made with Mexican spice,totally different and easier.
