FRUITY BREAKFAST BREAD


Fruity breakfast bread filled with Summer fruits is my entry to WBB #11 which was launched by Nandita from "Saffron Trail".
This month's host is Padmaja from "Spicy Andhra" and the theme is "Summer Fruits".Thanks for hosting Padmaja.



Well...I know it's not Summer for us yet and Spring is still cool!So what do you do with the Theme "Summer fruits"? I went to the store and bought a big can of Tropical fruits and used those fruits to bake a gorgeous and fragrant breakfast bread!:))
It's not very sweet,filled with fruit ,so a slice of bread with a cup of coffee is heavenly in the morning!Hope you try.Makes a great dessert as well:)

A bowl of fruits; Mangoes,Bananas,Grapes,Melon,Pineapple ,Pears and Apple!



Here is a plate for you with a bowl of fruit,a slice fruity bread and steaming cuppa!!:)




How to bake the cake:


Spray with non-stick oil and line the bottom with parchment paper of a 2lb loaf pan.Preheat oven to 350F.In a bowl,mix 1 1/2cups self-rising flour,1/2 tsp baking pd,1/4 tsp salt,3/4 cup sugar well.Add 1 1/2 cups finely chopped mixed fruits and mix well in the dry flour.In another bowl,whisk 2 eggs,5 tbsp Orange juice,2/3 cup Canola oil,well and add to the flour.Mix well gently.




Pour the batter in to the prepared loaf pan,tap on the counter to release the bubbles.Put in the middle rack in the oven and bake for 45-55 mins or until a skewer inserted in the middle of the cake comes out clean.Take it out,invert on the cooling rack and peel the parchment paper gently.



Note: Cool completely before slicing with serrated bread knife.If you like icing on top,mix 1/2 cup powdered sugar and few tbsp milk mixed grated rind of an Orange and drizzle on top of the bread when cooled.It's a very tasty, fragrant fruity bread to have for breakfast and icing is not really necessary.

Serve with coffee and a bowl of fruit:




Enjoy the beautiful bread,tastes better next day!

oh!!! did i tell u we got big basket of alphanso from indian store? yum...yummy...K made mango rasayana yest to go with neer dosa:)
and the queen will be coming to our office this month end with her hubby:) so full cleaning and painting is going on. feels like i am bk in school and all the scholl is getting ready for school inspection;) he he he...

This is not from the bread machine though,just a hand mixed quick bread baked in the oven,very easy.But do buy a bread,can make Yeast bread.
Queen and "King" in the office!!!WOW!! Are you going to "Courtesy" the Queen?;D

A really easy and cool cake. Beautiful pictures as usual. Loved the fruit bowl and the cake.Liked the idea of using icing on top. I have a really sweet tooth. I think this tip will satisfy mine. Your family is so lucky to get so many goodies from you all the time. Thanks Asha for sharing.

hmmmmm yummy..and i can very much imagine the taste as I made a tea bread last week which has more or less the same recipe...wanted to post it soon, but i have to make that again as the entire loaf was gone in 2 days:D Will be trying this fruit bread for sure...its like a no frou-frou baking!

wow Asha,its a wonderfull idea fruity bread. Eggas badlige yeast haki madbahuda? My bread machine is lying waste, well i do not even know where i have dumped in the store ha ha. i do all the bread making now with the electric mixer which has one for making bread too. But looking at you using bread machine ofr others i seriously will try to open from my store. WAiting for your jf and mango post. He What about you mothers day celebration yenu bardilla

Roopa,egg badalu 2 tbsp cream hakabahudu.Try madi.
This bread/cake is made by hand,can not use Bread machine for this as this is very delicate and soft.Must use the oven.

Hi BigS! The bread looks soft and yummy. Like the pinkish color too. At what temperature did you bake the bread? I dont think you have mentioned it. If you have, then I am probably going to get a 'READ before you comment' liner as well! Sia...lets hold hands.....pleeassee

Asha i love chow chow bhath combo not prepared by me but at darshini's in bangalore once i used to gobble iddili vada sambhar, along with cho chow my H was like oh?... my.. this was is what i want ....... but when i came to singapore he realised what a good cook i am ha ha yenu gotila..
BTW nimge 18yrs inda kannada film nodilla oh... even i was not a fan of kannada movie but after coming to spore i try to watch good movies. our last movie was Amruthdhare.. i loved it

I have heard of Amruthadhare which is a remake of “khwahish”(remember? Some 18 smooch scenes there with mallika sherawat in lead?;) anyways, its from eric sehgal’s Love strory which I have read some hundred times. But I do love the songs in that movie… especially “nee amrutadhaare”….
My memory span is just for few hours roopa;) ella begane martu hogatte:) at least I do remember most of the kannada words unline ashkka here;) he he he… I can see ashakka chasing me with a big stick iin her hand;) I better run and hide some where:)

Roopa seem to be enjoying the music site there,I still have to try it.Although I haven't seen any Kannada movies,I have loads of Kannada CDs I "sometimes" listen.Sometimes some Kannada words makes me laugh so hard bcos I remember saying that long time ago.
Tushar onde ondu Kannada word kalithu kondiddaane gotta.Nagabeda; He says "Swaamaa"!!;D
(Arvindge sittu bandaga "Soole magane" anta baytaane Tusharna.Yeah,I call Arvind "hogo,baaro,in singular!)
T cannot pronounce it properly in Kannada but he enjoys saying it back to Arvind without knowing what it means like swaamaa!!;P

and ashakka, u dont have to register in that site. www.musicindiaonline.com is the site url and u will find collections of songs in different lang and types on the left side lists. just click on kannada and then click on music listing(its in blue banner) u will be able to see many movies listed. this is th elink for mungaru male songs http://www.musicindiaonline.com/music/kannada/s/movie_name.8842
just copy this url on new window and select the songs u want to play by ticking on the boxes at left corner of each songs and then clicking the button at the top of the list. hope it works for u this time:)

I start early morning after kids and hubby are out of the house,I moderate,reply and comment for about an hour or more,depending on blogs and then do my daily karma as they say! I am a good organizer,so it's relatively easy!

hello asha ji,
according to your advice, I tried to bake the fruit bread. The taste is really good but it is not standing as a loaf of bread. It has become very much fluffy.The loaf broke itself apart i half when I turned it on to the tray for cooling. Any reasons what I did wrong.

Sirisha, it is very light fluffy bread as it is but still holds up a loaf usually. I can't say why you didn't the loaf but next time try cutting down the Baking pd to 1/4 tsp. Sometimes it works to add less to keep the shape.Good luck, don't give up, it is a tasty bread!:))

i was just thinking if I can try the same bread in the yeast version. can I ? what I have in mind is the taste like the tooty fruity bread in the bakery back in India. Can you just give me your experienced advise on this. Thanks for everything.waiting eagerly for your next post.

Good for you Sirisha, don't wait too long once the dough is mixed, sometimes it starts to puff as soon as baking pd starts to act. Preheat the oven first and then mix ,put the pan in the oven immediately.
Yeast sounds great too,I haven't tried it personally but experiment with it!:)

Anon, without eggs it might not be as fluffy and highly risen but in some blogs I have read that adding Apple sauce with help to replace the eggeg. 1 Egg = 2 tbsp of Apple sauce.
Try it, don't know how they come out though and taste great anyway!:))
