STRAWBERRY YOGURT PIE




I am bringing a tangy low-fat dessert from Finland Strawberry-Yogurt pie to Meeta from "What's for lunch honey" blog's Monthly Mingle with the theme of " big birthday bang ". Happy birthday to you Meeta and I bet we are all going to have a great party!!;D




Strawberry yogurt Pie, also called "Mustikkaiiras" in Finnish, is a very delicious, not so sweet and not so fatty pie you will love.After all the desserts I have been cooking lately,I almost didn't want to bake another cake and thought I would skip MM event this time.Then I just bought a cookbook called "The Moosewood collective:Sundays at Moosewood Restaurant", which has this delectable recipe.It uses 1/3 cup butter which is 6tbsps, would easily serve 6-8 portions!! Not bad, eh?! I was happy to find this recipe and baked,loved the taste.You can use any Berries you like,fresh or frozen and crust is so light,it was a delight to have a slice without feeling guilty.Hope you try.

Here is a slice for you!

You need:

A pie plate like this with perforated bottom or a any pie plate you have.
For the crust: 1/3 cup butter (6 tbsp),1/4 cup sugar, 1 egg, 1 cup unbleached Plain flour, 1/2 tsp baking powder.
For the filling: 2 eggs, 3 tsp sugar, 1 cup plain yogurt,1 tsp pure vanilla extract,1 tbsp lemon juice(optional),1 tbsp cornstarch, 2 cups Strawberries, fresh or frozen.



How to make this Pie:


Butter and flour a 9-10 inch pie pan.Preheat the oven to 350F.By electric mixer or by hand,cream the butter and sugar.Add the eggs and blend as well.Combine the flour and baking powder and mix them into the wet ingredients to form a soft dough.With flour-dusted fingers, pat the sticky dough into the bottom of th buttered and floured pie pan. Push the dough up to cover the sides of the pan.Refrigerate until you make the filling.



Mix all the filling ingredients except the Strawberries until smooth.Put the berries into the pie shell and gently pour the fillings so the berries are coated and evenly distributed.Bake for 50 or 60 minutes,until the crust is lightly golden and the custard has set.

Cool on a rack, loosen the sides with a knife gently.place the pie plate on a inverted bowl to release the outer ring if you are using the Pie plate like in the picture.Slice with plastic knife so you don't damage the non-stick coat.Serve as it is or sprinkled with powdered sugar.

Note: A pie plate with perforated bottom helps the crust to bake evenly letting the heat penetrate,thus preventing the soft crust.

Hahaha!! Richa,looks like lot of Musti without the "Muska" (Butter)!!It was great.I am tired baking sweets now,this was a great change.
Yeah,weekend was fun,did lot of shopping.Wedding on the beach sounds so great,I wish I had mine there!!;D

what??? if i remember well, u did say no baking and no indian cuisine for some time;) he he he...looks like u couldn't run away from temptation;)
looks lovely ashakka and ofcourse the fact of less butter does lure me:) i am not a big fan of sweets or cakes. but may be i can try this one for my better half. poor soul, coz of me he has to satisfy his sweet tooth with store bought sweets and desserts;)

Hey Asha, You were so right about the K diet. I went crazy eating that alone for two days. The third day I broke it all and went to the normal diet.

No Indian food for sure this week at FH Sia but baking savories like bread,I don't mind.
I am tired of cakes too,but this was tangy almost like Shrikhand,so I tried.You don't eat Eggs, you can increase Cornstarch or add some apple sauce to replace it.I am sure K will love it!:))

Kribha,eggs give you that yellowish color.Try it,not a lot of fat anyway,yogurt is good for you.
Best diet I know is eat small portions at least every 3-4 hrs a day and walk.All these fancy K and Slim fast etc don't work long term.Good luck.Indian trip is around the corner:))

We had a great time too,parade,lot of shopping,movie and BBQ!
Beach at this time here at NC is too hot and crowded.Everybody will be there sun bathing,so we decided to stay home and visit nearby cities:))

Choosing dates are always up to the individual hosts.Bee chose until 1st of June for JFI and for some others it's 20th or 25th,so it's quite okay.It's up to you really to choose to deadline so you have time to do the round up:)
Good that I just asked you.I was thinking, I need time to cook,which fruit is it? Ah..!!!:D Will check your blog later.

Viji,for every most desserts,eggs are necessary to make them bind and fluff when baking.I have heard from others that replacing apple sauce with egg works too.I have never tried it.Other thing you can do without eggs is add corn starch to make it bind.Experiment with it,may be it works:)

Purni, Blueberries will be fabulous too, even Mangoes!! This recipe was a big hit, even Arvind's staff in the clinic made this for a office party! :D

Ta mesmo muito Bonita e super deliciosa. Mas olha discordo, pois esta é uma pie tem crust e recheio, a outra e somente tart sem pastry, a única semelhança e terem ambas iogurte mas ate os iogurtes são totalmente diferentes assim como a textura.
Mas digo-te uma coisa adorei imenso esta pie, fiquei de agua a correr pela boca fora, é bem impressionante.
Loved to see this pie quite impressive, I may try to make it one day. thx for sharing it. luv ya xx
