Mint Leaves or Pudina:
I have a surplus supply of Mint and Chives in my backyard this year.I thought I would make something with Pudina which is Mint leaves in Hindi and put those delicious herbs to use.Poories are fried bread from India for somebody who don't know about it.Just adding some Mint leaves to any dish makes it wonderfully fragrant.
With the addition of spices,they are a delight to eat all by themselves but I served with some Tomato chutney I always have in the fridge.You could skip all the spices in the Poories if you like,just add salt and minced mint leaves,still tastes great.Hope you give these a try:)
Pudina(Mint) Poories:
How to make these Poories:Serves two
Mix 1/2 cup wheat flour(atta),1/4 cup Plain flour,salt,2 tbsp minced Mint leaves,1/4 tsp pepper pd pd,1 tsp Cumin pd,1/4 tsp ginger pd or fresh grated ginger,1 tbsp yogurt,a pinch of turmeric and add enough water to make a stiff dough.Cover and let it rest for 15mins.Heat oil to medium heat or 350F to deep fry.Divide the dough to about 6-8 small sized pieces.Make round balls,flatten and roll out to 1/8" thick about 4-5" circles.
You can use 4" cookie cutter to cut them.Place them on clean towel and slide in one Poori in the oil carefully,press down gently with the spatula until they puff and then flip and fry the other side until golden,drain on the paper towel.Repeat with others.Do not leave the Poories too long after rolling them.If they get dry,they don't puff as much.
Note:
Because of the minced Mint leaves and spices which are in the dough,these Poories do not puff like balloons as the regular ones do but they do taste delicious!!
Serve: Serve them with some plain yogurt or any chutney you like.They are quick to make if you are organized!:))

It suddenly got cold here last week,went down to 40F and then this week it came up to 70F which is lot nicer weather for Spring.Enjoy the sunshine there!:))

You can freeze the Mint too,keeps forever and fresh whenever you want to use it:)
Absolutely great for tea Pravs.You can add more of your fav spices like 1 tsp Rasam pd etc in the dough,tastes great without anything on the side.Try it:))

Today again it is raining heavily, climate very gloomy made my day difficult to wake my D and sent to school. even my son got up while leaving to office so all rona dona while leaving making me feel very sad to see the poor little one cry...:( thanks to the Ganesha movie Cd's which helped me to pacify him..

Yummy looking pooris Asha! I found some chives out in the old herb garden I had a few years ago -- didn't even realise they were still there! Maybe this year I'll try some mint too. You gardeners are inspiring me! Hope you don't get too drenched from Andrea -- a little rain is good anytime! :)

Hi Linda,you can Chives too to these Pooris,tastes great as well.Throw some mint seeds,easy to grow as long as they have some light and water,they are good.
Hope it doesn't rain too much,these Dagwood trees are so delicate they start to fall like crazy.

Pudina Puris, Asha u never stop to amaze me... :) You never have to worry about someone coming up with the same dish as you for an event :)... BTW, what are the purple leaves in the poori dough, are those mint leaves too?

Yes,they are young mint leaves from the top,as they mature they turn minty green.Young ones are less intense than mature ones which tastes like Indian Binaca toothpaste!:D
My aunt is like that,spends the whole day doing something sloooowly!I am ultra fast cook,keep everything ready before I start and am done and out of the kitchen in a jiffy!:D

Once you fry Pooris,you don't smell the ginger much (no Garlic in there!)but these (US Style Peppermints)mints are so strong,you taste the refreshing mint in every bite!Try it:))
